After many generations, the LeSeurre family, from the Champagne region of France, is proud to present for the first time ever, our handcrafted Finger Lakes Méthode Champenoise harvested in 2012. We will be releasing 4 styles of sparkling wines over the course of the next year: Brut Héritage, Blanc de Blancs, Blanc de Noirs and Rosé. These are our first vintages released, just in time to celebrate our 10 years in the Finger Lakes.


 
 
Méthode Champenoise: Traditionnally the Champagnes and the best sparkling wines in the world are made by Méthode Champenoise which requires a secondary fermentation in the bottle. This secondary fermentation is accomplished by adding a mixture of sugar and yeast to wine called Liqueur de tirage. The same day, this wine is then bottled and capped. The yeast ferments on the sugar and the resulting carbon dioxide remains trapped in the bottle. This is when the magic happens and the fine bubbles appear. After aging the wine for 10 years for our special release, the bottles must be hand riddled. It’s called Remuage, to collect the sediments in the neck of the bottle in preparation for disgorgement (dégorgement). At the end of this process the cap is removed and replaced with the traditional cork and wire cage (muselet). This process is labor intensive, as each individual bottle must be handled multiple times. For our 4 styles of sparkling, we counted that we handled each bottle at least 68 times.
 
Late Disgorged: Age alone does not make a late disgorged wine remarkable. To retain youthfulness and vibrancy after all those years, a wine requires that rare confluence of quality vineyard sites, a winemaker’s patience and the transformational effect of time on yeast. For this reason, late disgorgement represents the pinnacle of sparkling winemaking and a special piece of wine history.
